In the open markets in these countries, the stall-holder might be selling only a few apples, or a few fresh vegetables, from a garden or a farm, to supplement their income or to dispose of surplus produce. Most people have the ability to grow their own vegetables, and in the year 2009 this is becoming more popular. Some people say that the best tasting green peas are those we grow ourselves, and can pick, cook, and eat, on the same day!

| If you travel in China by train, you will see small terraces on hills or banks, where the local people are making the best use they can of the available ground to grow their own vegetables. Perhaps the vegetables are grown to sell in the local markets to supplement their income. You will often see farmers on the pavements in countryside towns and villages, displaying a few vegetables or fruits, that they are trying to sell. In the early mornings, if there is an open

market in the towns, you may see men and women carrying baskets of vegetables or fruit, with the use of shoulder-poles, making their way to the markets hoping to sell their goods while they are still fresh looking. If fruits and vegetables are not fresh when taken to the markets, it is unlikely that they will be sold at very good prices. The greater demand is for fresh vegetables and fruits, and the buyers and sellers will agree the best price to suit them both.
